If you've ordered delivery from a restaurant you'd never actually seen a storefront for, there's a real chance you ordered from a ghost kitchen — a food operation built entirely for delivery, with no dine-in space at all.
What a ghost kitchen actually is
A ghost kitchen (also called a virtual kitchen or dark kitchen) is a commercial cooking space designed purely to fulfill delivery orders, with no public-facing dining room, and often no public-facing storefront at all. Some are run by an existing restaurant using spare kitchen capacity to operate a second, delivery-only brand; others are run by companies that lease kitchen space specifically to launch delivery-only concepts from scratch.
Why the format grew fast
Ghost kitchens solve a real cost problem: dining rooms are expensive — rent, furniture, front-of-house staff — and a delivery-only operation skips all of that overhead. The format existed before 2020 but expanded dramatically during the pandemic, when dine-in restrictions made delivery-only operations look considerably more viable, and the growth largely continued afterward as delivery app usage stayed elevated compared to pre-pandemic levels.
Multiple brands from one kitchen
A single physical kitchen can operate several different "restaurant" brands simultaneously, each with its own name, menu, and delivery-app listing, even though they're prepared in the same space by the same staff. This is one of the more surprising aspects of the format to people who don't know it exists — two apparently unrelated restaurants on a delivery app might be the exact same kitchen.

- A quick search shows no independent storefront or Google Maps listing with photos of a dining room
- Multiple different-sounding "restaurants" share an identical delivery address
Is that a problem?
Not inherently — plenty of ghost kitchens produce genuinely good food, and the model has let some real chefs launch concepts they couldn't otherwise afford. It's mainly worth knowing about so you understand what you're actually ordering from, rather than assuming every delivery listing represents an independent physical restaurant with a dining room somewhere.
